  1. It’s 90 grams of chick pea/gram flour.
  2. It’s 1/2 tsp of medium curry powder.
  3. Prepare 1/2 tsp of turmeric.
  4. You need 1/4 tsp of salt.
  5. It’s pinch of black salt.
  6. You need 110 ml of light coconut milk.
  7. You need 40 ml of full fat coconut milk.
  8. You need 6 of spring onions/scallions, sliced.
  9. You need 6 of baby button mushrooms, sliced.
  10. Prepare 1 of medium tomato, deseeded & chopped.
  11. Prepare 1 clove of garlic, finely chopped.
  12. Prepare 1/2 of green chilli, finely chopped.
  13. It’s 1 tbsp of sweetcorn.
  14. It’s of oil for frying.

  1. Mix together the flour, curry powder, turmeric, salts and milks and set the thick batter aside.
  2. Heat some oil in a frying pan over a medium heat and fry off the onions and mushrooms for a few minutes before adding the garlic, chilli and tomatoes. Continue cooking on a low heat until the vegetables are tender.
  3. Add the sweetcorn to the pan then some more oil to make sure the omelette doesn't stick and pour in all of the batter to coat the entire bottom. Cook on a medium/low heat until the edges start to turn golden, around 7 or 8 minutes.
  4. Heat the grill/broiler and put the pan underneath on medium/low to cook the top side. You can flip the omelette instead if you like and cook the other side for a further 5 minutes.
  5. Serve half an omelette per person with a nice fresh side salad. You may like to scatter some grated vegan cheese over the top too.
